During the different vintages) the grape varieties Zweigelt and Blaufränkisch should be characterized by analytical and sensory methods to get information concerning the influence of vintage and vinification process for the overall quality of the selected wines. Each vintage will be characterised separately short after bottling. Five different wines from each variety vinificated from different areas (climate and soil) will be used. No schooling in small oak barrels (barriques) will be used to prevent additional aroma impact from wood extracts. Beside analytical characterization with different techniques (aroma profiling using HS-SPME-GC-MS, anthocyanin pattern, UV spectra, multivariate data analysis) gas chromatography-olfactometry will be used for the identification of aroma active substances. In addition a trained sensory panel will judge the wines by discrimination test within each group (Zweigelt and Blaufränkisch).
